Mini Pizza Muffins

These little pizza muffins were so good!  My kids ate them up!  We loved them! 

Pepperoni Pizza Puffs
  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 1 tablespoon Italian seasoning
  • pinch of salt (my addition, optional)
  • pinch of red pepper flakes (my addition, optional)
  • 3/4 cup whole milk
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup cubed pepperoni
  • 1/2 cup store-bought pizza sauce
1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using) ; whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.
2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.

Mini Mexican Pizza

Its been awhile... Thanks to pinterest, I have lots of fun new things I have tried...hopefully I can get back on the ball!!
 Here are some Mini Mexican Pizzas.  Everybody loved them!!

Ingredients:

  • 3-4 large whole wheat tortilla’s, or enough to cut out 12 small circles (I prefer low carb/high fiber tortillas)
  • 1 cup lean ground turkey, cooked (OR lean ground beef OR 1 cup Morning Star Meatless Crumbles)
  • 1/2 cup salsa of choice (I used one with corn)
  • 2 tsp dry taco seasoning
  • 1/2 cup low fat refried beans
  • 1/2 cup low fat shredded mexican blend or 2% cheddar cheese
  • Optional Toppings: sliced black olives, shredded lettuce, low fat sour cream, chopped tomatoes

Method:

  1. Preheat oven to 425 degrees. Spray a 12 count muffin tin with non-stick cooking spray.
  2. Start by laying each tortilla out individually on a flat surface, and use an empty can, glass cup, or cookie cutter to cut 3-4 medium circles out of each wrap.
  3. Press each wrap circle into muffin tin using your fingers. (Note: it doesn’t have to cover the entire side of the tin, it should just fit snuggly!)
  4. Meanwhile, in a small bowl, mix together the ground meat, salsa, taco seasoning, and refried beans. Stir until well combined.
  5. Scoop 1/8th cup of meat mixture into each wrap.
  6. Top with shredded cheese, (dividing evenly between each pizza), and olives if desired
  7. Bake in pre-heated oven for 12-15 minutes, or until cheese is melted.
  8. Wait for mini Mexican pizzas to cool, and remove from muffin tin using a fork or knife. Pizza’s should pop out with ease!
Serve with a side of salsa, low fat sour cream, chopped tomatoes, and/or shredded lettuce if desired!

Zucchini Pizza Casserole

I still have so much zucchini.  I am going to start posting all the things I have been making with it.  When I searched for zucchini recipes there are actually a lot!!  This one everybody loved!!
Zucchini Pizza Casserole

Yield: 6-8 servings.
4 cups shredded unpeeled zucchini
1/2 teaspoon salt
2 eggs
1/2 cup grated Parmesan cheese
2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
1 cup (4 ounces) shredded cheddar cheese, divided
1 pound ground beef
1/2 cup chopped onion
1 can (15 ounces) Italian tomato sauce
1 medium green pepper, chopped

1. Place zucchini in strainer; sprinkle with salt. Let stand for 10 minutes. Squeeze out moisture.

2. Combine zucchini with the eggs, Parmesan and half of the mozzarella and cheddar cheeses. Press into greased 13-in. x 9-in. baking dish.

3. Bake, uncovered, at 400° for 20 minutes. Meanwhile, cook beef and onion over medium heat until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture.

4. Sprinkle with remaining cheeses; add green pepper. Bake 20 minutes longer or until heated through.

Grilled Pizza

During the summer time we love to grill.  We probably grill 4 of the 7 days a week (or more) When I found this post on Mel's Kitchen Cafe about grilling pizza, i knew we had to try it.  We have all loved it so much that we have done it several times since!!
I used this dough recipe.
Fast and Easy Dough
3 cups flour, more or less
1 tablespoon honey, heaping
1 tablespoon oil, heaping
1 cup warm water
1 tablespoon yeast
1/2 teaspoon garlic salt
  It is not my most favorite recipe for pizza dough but it is fast and easy and that is always a bonus at our house!  If you click on the link above it gives you step by step instructions on how to grill your pizza. 

I like to cook my crust a little but longer, we like them crispy and it seems to hold together better!!
On our pizza we used:
my own sauce (i canned it last fall, it really is delish)
chicken
tomatoes
red onions
and shredded mozzarella cheese
the kids like peperoni and cheese
but really anything would work.  tonight we are trying zucchini, cause really we have a ton!!

Cheesy Chicken and Artichoke Pizza

If you live where I live, then you are familiar with Fredrico's. I'm sorry, but I find it odd that a pizza joint has artichokes for toppings, and NOT jalapenos! Seriously! Or maybe it's just me, after all, artichoke is the favorite topping of one of my friends, and my brother in-law requested it for his bday dinner. Maybe I'm out of the loop...?

So I found this recipe on Food.com , and the only change I made was that I added spinach. (cuz those spinach/artichoke dips at restaurants are de-lish! So why not.) And I must say, I'm now in love with artichokes on pizza. Mmmmm!!!


Ingredients:
  • 1 (10 ounce) Pre-baked prepared pizza crust (or any 12 inch pizza crust)
  • 3/4 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 1 (14 ounce) can artichoke hearts, drained and coarsely chopped
  • 1 tsp minced garlic
  • 1 1/2 cups monterey jack cheese, shredded
  • 1 cup chopped cooked chicken
  • 3 green onions, chopped
  • frozen spinach (optional)


Directions:
  • Heat oven to 450.
  • Place pizza crust on cookie sheet. (I used my Pizza stone)
  • In a medium bowl, mix mayo, parmesan, artichokes, and garlic.
  • Spread over crust, leaving one inch border.
  • Top with 1 cup of the cheese, chicken, onions, and spinach.
  • Top with remaining cheese.
  • Bake 8-10 minutes or until cheese is melted and pizza is thoroughly heated.

** The only thing I will do differently next time is get a different crust, or maybe make my own. I didn't like how this one didn't rise a whole lot and didn't make much of a rim around the edge.**
