Halibut Ceviche

Ceviche is a sort of pico de gallo (fresh salsa) but it also includes a fresh fish (preferably a white fish). The fish is cooked by the acidity of lime juice, so there is no oven necessary. 

My father in-law brought us some Alaskan Halibut from his most recent trip (ya, we're spoiled). I've had ceviche with crab before (which was DELICIOUS) and then found this recipe for the halibut, and thought 'why not.'

It turned out great, and was a huge hit at the family party. - I always have to test out new recipes on them. :)

 
 
What you need.... (onion was shy for picture)


 
Since we are 'cooking' our halibut in lime juice, please please please use FRESH limes! They taste sooo much better, and the acidity is much more potent than the bottled stuff.
 
Pour the lime juice over the fish and let it sit for at least 20 min. But not too long or the fish will become too rough and mostly taste of limes.
 
 
 While halibut is soaking, chop up the veggies and give them a good toss.



Ingredients:
1 pound halibut {you can also use tilapia}
8-10 limes {juice of- approximately 1 cup}
1 red onion, chopped
2 tomatoes, chopped and seeded
1 serrano pepper, finely diced and seeded
1/2 cup cilantro chopped
salt to taste

Directions:
  • Cut halibut to bite-sized pieces and place in shallow dish. 
  • Cover with 1 cup fresh lime juice and set aside for 20-25 minutes. 
  • Meanwhile mix together onion, tomatoes, serrano pepper, cilantro and salt to taste. (halibut can be a bland fish, so it may take quite a bit of salt)
  • Drain lime juice from halibut {discard lime juice}.  
  • Add halibut to the pico-mixture and gently fold together. 
  • Squeeze the juice of 1 more lime on top of cevhiche and mix together. Enjoy! 

 




Halibut with Zucchini Salsa Verde

My husband is a fisherman... So we love to eat fish. I'm always looking for good/delicious fish recipes so that it doesn't get boring to eat. I found this one on Epicurious, and we loved it! We even used the salsa verde for fish tacos the next night. It was delicious!

My blender broke while trying to make this, so a lil shout out to Kassey for being such an awesome neighbor and loaning me her's. Otherwise, this meal would not have happened... at least not that night. :)

I also calculated this recipe using caloriecount.com and it's only ~250 calories per serving! Love that!!!

Ingredients:
  • 10 ounces zucchini (about 2 medium), trimmed, chopped
  • 1/2 cup chopped fresh cilantro plus leaves for garnish
  • 1/3 cup chopped white onion
  • 5 tablespoons fresh lime juice
  • 2 1/2 tablespoons chopped seeded jalapeƱo chiles
  • 1 1/4 teaspoons finely grated lime peel
  • 2 1/4 teaspoons salt, divided    ***comments on the site said this was too much salt... I used about half this and that seemed just right to me...***
  • Nonstick vegetable oil spray
  • 1 1/4 teaspoons freshly ground black pepper
  • 1 1/4 teaspoons ground coriander
  • 6 6-ounce skinless halibut fillets or cod fillets.
Directions:
  • Combine first 6 ingredients in a blender. Add 1 1/4 tsp salt. (about half this, if you decided to use less like I did) Puree until salsa is smooth. Transfer to a small bowl. Cover and chill. (can be made 2 hours ahead)
  • Preheat broiler. Line broiler pan with foil. Coat foil with nonstick spray. Combine pepper, coriander, and remaining salt in a small bowl; stir to blend. Pat fish dry. Sprinkle fish on all sides with seasoning mixture.
  • Arrange fish on prepared pan. Broil until just opaque in center, 3 to 4 minutes per side, depending on thickness.
  • Transfer fish to plates. Spoon some salsa over top. Garnish with cilantro leaves. Serve with remaining salsa.

    Baked Halibut Supreme

    This picture doesn't do it justice for how delicious this is. Mmmmmmmmmmm....


    Bake Halibut Supreme
    • 3 lbs fresh or frozen Halibut
    • salt/pepper
    • Butter
    • 1/2 cup Parmesan Cheese
    • 4 Strips Bacon
    • 1 tsp Lemon Juice
    • 1 c Sour Cream
    • 1/3 c Buttered Bread crumbs
    • chopped parsley

    Directions:
    • rub halibut with butter, salt, and pepper.
    • lay bacon on bottom of pan, and place fish on top.
    • mix sour cream, cheese, crumbs, and lemon juice. Spread over fish.
    • Bake at 350 deg 20-30 minutes or until done.
    • Serve sprinkled with grated cheese and parsley.
    ***Eat bacon at own risk.... I recommend NOT eating it. ***
